University of Leeds

The University of Leeds was keen to achieve Food for the Brain accreditation for their newly designed Refectory and satellite food stations. The Russell Partnership’s Nutrition Consultant, Fiona McDonald Joyce, worked closely with Catering Operations Manager Ian Addy to help them to improve nutritional standards and communicate such efforts to students and staff alike.

A Nutritional Audit was conducted in May 2007, at which Leeds scored 57% - short of the 75% pass mark for accreditation. Amongst the areas highlighted in the audit report were the needs to consider healthy snack choices and to avoid processed items. The new Refectory had yet to be opened so food service was restricted, but a mid-way inspection at the client’s request showed significant improvements when the Refectory was up and running. The focus had clearly shifted towards fresh, high quality ingredients and the new food offers were proving extremely popular with students.

Workshops on Nutrition in Practice were also implemented by The Russell Partnership to fulfill the requirements for staff training by Food for the Brain.

A follow up audit in February 2008 saw Leeds’ score rise dramatically to 80%, and they were awarded Food for the Brain accreditation. They are now planning to build upon this achievement by sourcing increasing amounts of their food locally.
