Teriyaki Seared salmon Nuggets with pineapple and coriander salsa on multi seeded Bagel

Ingredients (@ quantity):

multi seeded bagel @ 1;
fresh salmon fillet @ 120gr;
Teriyaki Sauce @ 1tbs.;
extra virgin olive oil @ 1/2 tbs.;
Fresh pineapple peeled and diced @ 50gr;
red Chilli, diced and seedless @ 5gr;
Vine Tomato deedles and finely diced @ 1/2 ea;
red onion finely diced @ 10gr;
fresh Coriander, finely chopped @ 1 tea sp.;
lime, juice only @ 1/4 ea;
Cream Cheese, low fat @ 25gr;
sea salt @ pinch;
freshly ground black pepper @ to taste;
micro herbs, mustard cress @ to garnish;

Method:

cut the fresh salmon fillet into 4-5 long slivers and marinate with the teriyaki sauce for 1 hour. bake the bagel in preheated oven for 10 minutes, cut in half when cooled down and spread the cream cheese on both sides. Mix the finely diced pineapple with the diced tomato, onion, chilli and the coriander. Add the olive oil, salt, pepper to taste and the lime juice. mix well and set aside. Grill the salmon slivers from both sides for a minute each sid eunder a very hot grill. Place the salmon nuggets on to base part of the bagel and top with the pineapple salsa. place the lid back on to and set on large plate, garnish with micro herbs/mustard cress. Bon Apetite
