A part of Brighton since 1859, the University has 21,600 students studying across five campuses in Brighton, Eastbourne and Hastings.
Russell Partnership Collection was commissioned to carry out a Campus Portfolio Review of catering arrangements, reviewing operational footprint and actual market potential before developing an appropriate model for Brighton, aligned with future population projections and estate strategy. This work was underpinned by optimum food production delivery, logistics & breakdown scenarios, optimum space modelling, and profit and loss projections.
